Vanilla cuts come from short vanilla (less than 10cm), broken or flaccid vanilla. It has a very low moisture content, from 17 to 21%. The vanilla costs keep a fruity and powerful scent despite its vanillin level varying between 1 to 1.2.
It is ideally used for transformation into extract or powder.
