There are two types of red vanilla: European red vanilla and US red vanilla.
European red vanilla, as its name suggests, is the most favored vanilla in European industries. The pods are composed of small red or yellowish thread. Its moisture content varies between 26 to 28%. It can come in two forms: split or unsplit with a level of vanillin varying between 1.5 to 1.6.
The red US vanilla or USA, interests the greatest number of Americans. It is drier than European red vanilla and is differentiated by its reddish or yellow color. Its humidity is 22 to 25%.
European and US red vanilla, like premium vanilla, retain a powerful and floral aroma.
